EQUIVALENT: cornmeal mush


DEFINITION: Thick, creamy polenta-like mixture of cornmeal cooked in salt water served as an accompaniment to chicken, fish and beef dishes, such as rabada.


EXAMPLE: When mixture has the consistency of cornmeal mush, remove and press into a moistened 1 quart mould.

COMMENT: Traditionally, angu was known as food for slaves. Alternatively, it can be prepared with rice or manioc flour cooked in coconut milk or seasoned broth.
