DEFINITION: Stew of layered beef and seasonings cooked very slowly in a sealed clay pot.


EXAMPLE: Serve the barreado in ceramic dishes with rice, finely ground cassava meal, bananas, and hot chili pepper.

COMMENT: Typical of the state of Paraná, this dish was traditionally cooked by a fire burning over a clay pot sealed to the lid with a mixture of manioc flour and water, hence the name barreado (muddy). Nowadays it is also made on wood or stove fire and will be ready after cooking for at least 12 hours or until the meat melts, forming a mush. It may be accompanied by rice, manioc flour and plantains.
