DEFINITION: Yellow sauce made with the juice extracted from the manioc root, its use is essential in the preparation of tacacá and pato no tucupi.


EXAMPLE: Reduce the heat to a simmer and stir the tapioca gum, jambu leaves, and dried shrimp into the tucupi mixture.


COMMENT: After extraction, the manioc juice rests so that the starch separates from the liquid, which must be boiled until cyanide is eliminated. The seasoned and bottled sauce is largely used in Amazonian cooking.
