DEFINITION: Spoonful-sized cake made from a batter of ground dried black-eyed peas, shrimp and seasonings, deep-fried in dendê oil and filled with vatapá, hot pepper sauce and shrimp.
EXAMPLE: Split the acarajé slightly in half lengthwise and fill with a teaspoon of warm vatapá or malagueta pepper sauce. Serve hot.

COMMENT: Originally prepared as a food for rituals of Afro-Brazilian religions, acarajé became a street food sold all over Bahia by vendors in typical Bahian dresses.
