EQUIVALENT: sweet potato


DEFINITION: Root which is boiled, baked or fried to accompany meat dishes or used in the preparation of desserts.


EXAMPLE: Mash enough sweet potatoes to make 1/4 cup, mix it into the broth, and pour the broth over the vegetables and meats.

COMMENT: Rich in vitamin A, most sweet potatoes marketed have white, pink or purple skins and white or yellowish pulp, but yellow- and purple-skinned potatoes with yellow, pinkish or purple pulp (like beetroot) are also available. The white one, with yellowish skin and pulp, is not very sweet and turns dry and brittle when fried. The purple type turns sweeter and softer after cooking.
