DEFINITION: Spoonful-sized cake made from a batter of ground dried black-eyed peas, dendê palm oil and spices steamed in banana fronds.


EXAMPLE: The abará is cooked when the covering fronds are tender.

COMMENT: Typically prepared for rituals of the Afro-Brazilian religion Candomblé, abará combines the same ingredients used for making acarajé, which is deep-fried. Ground dried shrimp may be added to the batter for flavoring.
