DEFINITION: Typical of the state of Maranhão, this slightly acidic, creamy texture dish prepared with roselle, dried shrimp, sesame seeds, manioc flour, pepper and seasoning, is a very appreciated accompaniment to fish.


EXAMPLE: Serve the cuxá with fried fish.


COMMENT: Together with arroz de cuxá, this traditional dish combines ingredients which represent the influences of the four most important peoples for the formation of the state: the African roselle; manioc flour, very appreciated by native Indians; sesame seeds, introduced by the Arabs; and the Portuguese way of preparing the greens by cooking and macerating.
