DEFINITION: A finger-shaped green vegetable with pods which must be cooked to be eaten as salad or used as essential ingredient in caruru and quiabada.
EXAMPLE: Wash the okra pieces, brushing each one gently. Pat them dry with a kitchen towel and reserve.

COMMENT: Introduced in Brazil by the African slaves, okra is especially used in the Northeast and in Minas Gerais, where it is a common accompaniment to chicken stew. When cooked, okra delivers a kind of slime which can be reduced by adding lemon to the recipe.
